Easter Weekend in Greeley: Part Two

On Easter Sunday we went to church
and then drove to Estes Park to eat lunch
at the Stanley Hotel.

The Stanley Hotel, known for its architecture, magnificent setting and famous visitors, may possibly be best known today for its inspirational role in Stephen King's novel, "The Shining". The hotel has been featured as one of America's most haunted hotels and with the numerous stories from visitors and staff, The Stanley Hotel continues to "shine" today, as it did in 1909 when first opened.

The food was incredible.
There was a salad station with organic mixed greens
 and a crisp vegetable display.  An artisanal cheese
 display featured award winning domestic and 
local cheeses.  There was a fresh omelette station
 for made to order omelettes.  A carving station
 featured slow roasted spring leg of lamb 
and apple wood smoked

The buffet had ham and spring basil bisque, 
grilled red bird organic chicken
with wild rice ramps, filet of Colorado beef with
 wild morel mushroom sauce,
poached Scottish salmon with spring herbs, 
roasted new potatoes, sauteed
green beans with toasted almonds, and 
potato gnocchi with English peas and lemon
cream.  There was a chilled seafood display and
 a table of dozens of different breads and scones.  
Dessert included ricotta cheese cake, 
a chocolate sampler
(including chocolate covered strawberries),
lemon pound cake with Chantilly cream
 and berry compote.

Construction of the Main Building began in 1907 and took two years to complete. It was built with steel support beams and timber cut from land now known as Rocky Mountain National Park. Most of the timber came from the Bear Lake burn in 1900, which may account for the faint smell of wood smoke that can be detected on a warm, summer day.

We had a great day in Estes Park.
Colorado is a beautiful place.
